For pasta recipes...YUM!

This is good, easy...and meatless:

Tomato and Olive Penne

Ingredients:

Salt and pepper
1 lb penne (I like whole wheat varieties)
1/4 cup olive oil
2 garlic cloves, thinly sliced (I use more--3 to 4 cloves, depends on your taste)
2/3 lb cherry tomatoes (2 cups) halved or quartered
1 t dried oregano
1/4 t crushed red pepper
1/4 cup Kalamata olives, pitted and sliced
1/4 cup fresh parsley
1/4 cup parmesan cheese

1. In large skillet, heat olive oil over medium heat. Add garlic and cook...add cherry tomatoes, oregano, crushed red pepper, 1/2 t salt, 1/4 t pepper.
2. Reduce heat to low and cook, stirring until tomato juices run...about 3 minutes.
3. Add penne (cooked per directions on box), olives, parsley and 1/4 cup parmesan to skillet and toss to combine.

Great recipe! I make similar combos all the time, and enjoy using different kinds of pasta, from shells to linquine!

You can throw in all kinds of other things:
Fresh basil
Mushrooms
Romano cheese
Bell peppers
Spinach

Yuuuuum! I think I might go make something now

Oh, and for the ladies who don't tend to keep fresh veggies around, you can make an even simpler version with ingrediens that don't spoil quickly.

Just use:
Extra Virgin Olive Oil
Chopped garlic (you can buy it in jars)
Dry Basil
Any other dry herbs you might have laying around the house!

Just throw it all together in a small skillet and simmar, throw over some pasta, and add some parmasan cheese!

A dish I grew up on: (Tastes so much better than the sound. It's sounds plain.. but tastes amazing!)

Spaghetti Pizza Style:

Ingredients: 1/2 - 1 whole box of spaghetti.
1 jar of spaghetti sauce. (I use meatball pasta sauce)
1-2 packs of pepperoni
3 cups of mozzarella
And any other ingredients that you like on your pizza: ie: mushrooms, green peppers, onions, sausage, etc etc.


Preheat oven to 350 degrees. Boil spaghetti (adding a bit of oil) until done. Put half of the spaghetti in a glass casserole dish. (13x9) put about half of the spaghetti sauce in, and stir it around. Then layer your toppings, along with a layer of cheese, evenly. Then add the rest of the spaghetti, and layer the toppings also. (If just using pepperoni, it is best to put a layer of pepperoni under the cheese, and on top. (but then again, we LOVE pepperoni!!)
Put it in the oven, uncovered for 25-35 minutes, until cheese is a little golden brown.


It sounds like a boring meal.. .but it tastes great!! It's easy to make too... the leftovers are great re-heated too! That's hard to find!

I found a great recipe that is healthy for all of those TTC and need the extra vitamins!

1 package whole wheat pasta
2 ounces goat cheese
2 ounces of either laughing cow cheese or nauffetel cheese (lower in fat version of cream cheese)
1 bag of baby spinach leaves (fresh)
1/8-1/4 teaspoon minced roasted garlic
1/2 teaspoon honey (cuts bitterness of spinach)
1/4 cup shredded romano cheese

boil pasta with olive oil until aldente'
drain, but reserve 1/2 cup of pasta water (keep this warm)

In blender or food processor-
puree goat cheese, cream cheese, garlic, and honey
Once smooth add 1/3 bag of spinach and puree until mixed (its ok if some leaves are still visible)

Take pasta and add another 1/3 of the bag of spinach leaves and 1/2 cup of pasta water in a bowl, toss lightly. The spinach leaves will wilt slightly but keep their green color, then add cheese mixture to the bowl and toss. Sprinkle with romano cheese and serve. This is a room temp dish great on its own or with broiled samon, grilled steak, or chicken.

Found this on Food Network. Sounds strange, but believe me, it tastes great and is good for you and your DH!

6 Tbsp unsalted butter
1/2 cup finely chopped onions
6 garlic cloves, coarse chop
1 cups Chicken stock
2 Tbsp chopped fresh rosemary
1 pound fettuccine or spaghetti
1/4 cup grated parmesan cheese plus more for table
3 Tbsp kosher salt
ground pepper to taste


1.Melt 4 Tbsp butter in large pan over medium heat.
2. Add onions and cook until well carmelized - about 7-10 min.
3. Add garlic and cook and additional 2 min.
4. In large pot bring 3 quarts of water to a boil and add pasta, cook 7-10 min. until al dente.
5. While pasta is cooking add 1 cup of chicken stock and chopped rosemary to the onions. Increase the heat to medium-high and cook until reduced by about a third, 6-8 minutes.
6. When pasta is done drain well and add to onion-garlic-rosemary pan with remaining 2 tbsp butter and cheese. mix well until butter is incorporated and add salt and pepper to taste.


I like to add (precooked) shrimp, so I add a nice bunch (i use like 3/4 lb) halfway through the sauce reducing, to let it warm them up. Delicious!
