There really isn't much to be worried about. Masturbation is normal and healthy (better then him having sex!), and noctornal emissions are out of his control. Is there a male family member or close friend who could talk to him about his changing body?
Really the fact that he isn't hiding his sheets shows he's not ashamed and isn't trying to hide it from you. You couuld try approaching it to him as well, about how now that he's a teen he might be having feeling for girls, he might be discovering sexual feelings, and let him know you're willing to talk to him if he'd like.
There isn't much to be embarrssed about, obviously he isn't.
