What are you ladies having for dinner? What did you have for dinner last night?

I'm having a hard time coming up with some ideas for dinner and am hoping this may spark some dinner plans for me

I had company this weekend and we had Chicken Enchiladas (really easy to make a mass amount) Make your own Pizza night (with toppings like jalapenos, feta, spinach, tomato, fresh basil, garlic mushrooms, etc) Nachos with all the toppings.

Under normal circumstances I cook suppers one week, and bigger lunches the next due to my husband's schedule!
Some we do a lot are:
Pasta and meatballs (I keep them in the freezer)
Tacos
Chicken breast and steamed veggies
Perogies and bacon
Breakfast for supper (pancakes or waffles)

Well, lol...I'm a vegetarian, my husband is a meat eater and won't touch vegetables, my two older step kids (one loves meat, the other survives on rice)....by two youngest are well, trying certain foods.

So dinner for us is crazy. I usually hope that there is at least one item EVERYONE will eat.

During the fall and winter I love hearty homemade soups with crusty bread!!! I put it in the crockpot and it's done by dinner! you can even pre-cut your veggies, freeze em, and throw them in each time, add either arley, pasta, meat, whatever and go from there.

I love rice/veggies dishes or veggie/pasta dishes. A little sauce , sauteed with veggies and pasta ia yummy............

Bakes ziti is a fave of all of us. Just make the pasta, throw it in a pan, mix around the ricotta, sauce, and mozerella, stick in oven for 30 minuets and watch the fam go crazy...lol

I know I am a few days late but we are having garlic parmesan chicken, roasted potatoes, and sauteed veggies (asparagus and mushrooms) for dinner. Last night we had Wendy's I am trying my hardest to get us on a more healthy diet and cook 'clean'. It is a work in progress though.
