1/2 c onion slices (thin)
1 TBSP minced garlic
1/4 c pepper slices (also really thin)
1/3 c margarine or butter--I prefer smart balance; it's better for cholesterol
few sprinkles of italian seasoning
*above ingredients are maybe .50
2 or 3 chicken breasts in thin slices (I use split breast and fillet it myself)
8 oz. angel hair pasta, prepared according to package
*above ingredients are approximately 1.25 (if purchased on sale ).
Start with the butter in the pan you cooked your pasta in (I use a large sauce pan; put the angel hair in the strainer until later). Add chicken and cook until cooked through--because they're thin, it shouldn't take long. Add the garlic, onion, and pappers. Sautee until the veggies are tender--not mushy. Sprinkle in a little italian seasoning. Rinse the pasta so it separates, and add to the veggies and chicken. Sautee a minute or two, and serve with steamed broccoli (.50).
