So I am trying to find things to make that arent to hard or time consuming and I realized that my menus are VERY limited! lol So if people could share any recipes they have for lunch or dinner items that are not too difficult (Im not a great cook) I would really appreciate it!
One recipe I am looking for that I have no clue how to make is egg salad for sandwhiches. I used to love eating these in school, but I have no clue how to make egg salad for them...but trust me ladies I will take any ideas you have! The only thing I do not like is sea food and DH is actually allergic to most so we will avoid that.

Egg salad is boiled eggs, all chopped up, with mayo and a little mustard and my moms special ingredient pickle juice lol. Also green onions and I sometimes put celery in mine
I make homemade Mac and cheese just melt butter in a pot add some flour, just a few tablespoons of flour, once it is blended add milk and whatever kind of cheese, I use cheddar, parmesan and cheese slices  sometimes I add onion into the butter and flour it gives it a nice little taste cook until the cheese is melted and if it needs to be thicker just add a bit more flour  and the best is that Hunter loves it!!!
Another one is Rosemary lemon chicken, just pit chicken breast into a roaster add lemon juice and Rosemary and bake in the oven until the chicken is cooked
If you are looking for things to cook and freeze spaghetti sauce is always good and shepards pie, my mom made me a bunch of those and I would just pop them into the oven after Hunter was born
I will try to think of some more!!!

egg salad is easy!!! so you get eggs and boil them for what 15 mins? I think... and then peel them and get some mayo and with a fork smash the egg up with the mayo add salt and pepper to taste... and then put on bread or rolls...
as far as other things... hmmm I have a REALLY good EASY recipe for Zupa tuscana (olive garden potatoe soup)
you take ground italian sausage 1 pound and brown it then in the same pot put 5 Cups of chicken stock (or you can do 5 cups of water and 5 chicken bullioun cubes) in then you cut up 6 potatoes and put them in the pot... (I like a lot of potatoes and I like them peeled...) let boil until potatoes are soft then add 1 cup of whipping cream and let simmer and then add kale!!! and there you go!!!

I have a super fast and easy recipe for homemade chicken pot pie...
We use frozen, prebaked yeast rolls to top the chicken mixture with and just let them defrost a couple hours ahead of time.
Preheat oven to 350 degrees. Cut up and brown boneless, skinless chicken breast in a pan in a small bit of oil. When it's just about cooked (5-10 minutes, depending on the size chunks) remove from pan and let sit.
In a pot or the pan you used to cook the chicken, mix together 2 cans of cream of chicken soup, one bag of frozen mixed veggies (peas and carrots are good and you don't have to cook or defrost the veggies) and whatever seasoning you like. We use salt, pepper, garlic and onion powders, poultry seasoning and parsley. Add chicken and whatever juices may have run off from it and mix all together. Heat until mixture is hot, stirring often. Pour into a 13x9 pan that's been sprayed with Pam or coated with butter and then top with yeast rolls. Bake for 15-20 minutes or until rolls are golden brown.

Here's another one for you that's super easy...
Spray inside of crock pot with non-stick cooking spray. Put in one (3-4lb.) trimmed brisket, cover with 3/4 cup of BBQ sauce, your choice of brand, and add 1/3 of a cup water, cover and cook on low for roughly 8-10 hours. When it's cooked you can either chop it up for BBQ beef sandwiches on hamburger buns (which we like with baked sweet potato fries) or you can slice it for sliced beef sandwiches or as a part of a dinner.
Baked sweet potato fries:
Peel and slice sweet potatoes into large french fry size slices. (Think homemade fries, not skinny fast food fries.) Place in mixing bowl and coat with oil (we use grapeseed because it's healthier, but veggie or canola oil works just fine), salt and pepper to taste. Bake on a baking sheet for approximately 30 minutes and then mix them around (trying to flip as many as you can) and continue baking until they reach desired doneness, somewhere between 10-20 minutes longer.

I love everything I've made from this blog:

I especially love the sloppy joes and the chicken cordon bleu, and the cookies, but those aren't meals, lol!
Oh and my chicken enchiladas are super easy, throw the chicken in a crock pot with a large can of enchilada sauce and one of those little cans of green chiles. After 4-5 hours on high (or 8 ish hours on low), take the chicken out and shred it. Then put it in tortillas with shredded cheese and roll them up, cover them with the sauce from the crock pot and more shredded cheese, then top with olives. Bake in 350 degree oven for 20 minutes. Or before you bake it, throw it in the freezer to eat later. Two chicken breasts make two of the large pyrexes full of enchiladas, so I bake one and freeze the other.

The easiest that I can think of is a steak salad.
You need:
Steak
Mixed salad bag
Other veggies such as cucumber, tomatoes, onions, etc
Feta or Bleu cheese (or you can use any other you like)
Dressing (I use an italian but you can do anything)
Green beans - fresh cut from the produce
Season the steak and grill it. I use the George Foreman grill if the weather is bad. Wash & cut the greenbeans and sautee in a skillet pan. Make the salad and toss it in the dressing. Put the salad on plates/bowls -add a little cheese, green beans, and thinly sliced pieces of steak to the top.
You can add or omit anything. You could make it just a grilled chicken salad. Just putting it out there.
