TTC since August 2008
6 IUIs:

IVF #1 (september 2012): 11 eggs, none fertilized, no transfer
IVF ICSI #1 (may 2013), 1 blastocyst: (m/c 7 weeks )
FET #1 (october 2013), 1 blastocyst:

IVF ICSI #2 (april 2014): 5 eggs, 4 fertilized, 2 bad quality embryos, no transfer
IVF ICSI #2.1 (coming soon)

I made spinach and cheese stuffed pork chops with a half a sweet potato...it was pretty tastey.

I cooked the spinach and while it was boiling, I cut pockets into the thick end of the pork chop. Drain the spinach (we used frozen) and squeeze out most of the water. I mixed some shredded cheese with it (whatever you like for cheese) and stuffed it into the porkchop. I toothpicked the porkchops closed. And then I seasoned them with a Mrs Dash table blend. The oven was preheated to 400 and I baked them for an hour...They were dry as hell but I stink at cooking pork. Next time, I'd try maybe 40 minutes...or 45. It was good but dry. Just watch them!

Do you have a meat thermometer? Is so check them after 30 mins. Once they reach an internal temp of 180 F they are done. (Make sure you don't have the tip of the thermometer in the spinach and cheese mixture. I've found pork chops average about 30-40 mins at 400 degrees.

I do have a meat thermometer but stupid me didn't think to use it, lol. And of course my husband piped in his two cents about how to cook pork. I will def have to remember to use the meat thermometer! Thank you!
