OK, I know that I have shared this here before, but this one is worth resharing again and again. It's so simple and sooooo delicious!


BROWNIE PUDDING CAKE
prep time: 15 min. bake time: 40 min
cooling time: 45 min. serves: 6

1 c. all-purpose flour
3/4 c. granulated sugar
2 T. unsweetened cocoa powder
2 t. baking powder
1/4 t. salt
1/2 cup milk
2 T. cooking oil
1 t. vanilla
1/2 c. chopped walnuts
3/4 c. packed brown sugar
1/4 c. unsweetened cocoa powder
1 1/2 c. boiling water.

Preheat oven to 350. Grease and 8X8X2 inch baking pan; set aside. In a medium bowl stir together flour, granulated sugar, the 2 tablespoons of cocoa powder, the baking powder, and salt. Stir in the milk, oil, and vanilla. Stir in the walnuts.

Pour batter into prepared baking pan. In a small bowl stir together the brown sugar and the 1/4 cup of cocoa powder. Stir in the boiling water. Slowly pour brown sugar mixture over batter.

Bake for 40 minutes. Let cool 45-60 minutes. Serve warm. Spoon cake into dessert bowls; spoon pudding from bottom of the pan over the cake. Serve with vanilla ice cream.


I made this without the walnuts because my DH doesn't like them, but I'm sure it would be even better with them. When you first pour the brown sugar mixture over the batter you are going to think for sure that you just messed up entirely. It's great though. As it bakes, the batter raises to the top and the liquid forms the pudding underneath the cake.

This recipe first appeared in an issue of Better Homes and Gardens when people were urged to cut back on certain items. It was called a "shinning example of wartime restraint" because it skimps on the sugar and uses no butter or eggs.

Ok, I have another one. Yesterday Matt bought me this Hershey's recipe box that is FULL of dessert recipes that use Hershey's chocolate. I tried one pretty much immediately and it was AWESOME! Definitely a new family favorite.

S'MORES SANDWICH BAR COOKIES

1/2 c. butter or margarine (softened)
3/4 c. sugar
1 egg
1 tsp. vanilla extract
1 1/3 c. all-purpose flour
3/4 c. graham cracker crumbs
1 tsp. baking powder
1/4 tsp. salt
1 1/3 c. (8 oz. package) Hershey's mini milk chocolate bars
3 c. miniture marshmallows

(You can use regular Hershey's bars (5 of them) instead of the mini's or 2 of the extra large ones. It calls for the milk chocolate, but I used the ones with almonds and it was still great.)

1. Heat oven to 350 degrees F. Grease 8 inch square baking pan.

2. Beat butter and sugar in large bowl until well blended. Add egg and vanilla; beat well. Stir together flour, graham cracker crumbs, baking powder and salt; add to butter mixture, beating until blended. Press half of the dough into prepared pan. Bake for 15 minutes.

3. Sprinkle mini chocolate bars over baked layer or arrange unwrapped chocolate bars over baked layer, breaking as needed to fit. (I just cut the big bars into pieces where the lines were and arranged them to basically cover.) Sprinkle with marshmallows; scatter bits of remaining dough over marshmallows, forming top layer. (I added a few more little squares of chocolate on top just for looks basically) Bake 10-15 minutes or just until lightly browned. Cool completely in pan on a wire rack. Cut into bars. Makes 16 bars. ( I don't know how little their bars are. More realistically, it made 9 bars.)

I don't know that I have one. I'll have to think about it. I will say though that I have made the Brownie Pudding Cake several times... LOVE it!!! I'll have to try the S'mores one! Looks yummy!

I thought of one!

Magic Cookie Bars

Prep Time: 10 minutes
Cooking Time: 25 minutes
Makes: 24-36 bars

Ingredients:
½ cup (1 stick) butter or margarine
1½ cups graham cracker crumbs
1 (14 oz.) can sweetened condensed milk
2 cups (12 oz.) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts

To prepare:
1. Preheat oven to 350 degrees (325 degrees for a glass dish). In a 13x9-inch baking pan, melt butter in oven. Sprinkle graham cracker crumbs over butter; pour condensed milk evenly over crumbs. Top with remaining ingredients; press down firmly with a fork.
2. Bake 25 minutes or until lightly browned. Cool. Chill in the refrigerator if desired (recommended since it helps to form bars). Cut into bars or diamonds. Store at room temperature.

Recipe Variations: Substitute chocolate chips or nuts with: candy coated pieces, dried cranberries, raisins, mini marshmellows, or butterscotch chips.

That sounds yummy. I won't be able to try it myself though. I'm allergic to coconut. Matt and the kids would probably love them though, so I'll have to make them for them.
