I'm trying to create a nice spiral to do a text on a path but I am having a super hard time making the swirl/spiral

I'm using CS and using the Pen tool to try and create a wave/swirl/spiral line but I'm not pulling it in the right direction at all -- is there a good trick to this tool that I'm missing? or does anyone know of a tutorial for this?

TIA
