SUMMER IS OFFICIALLY HERE! Nothing says summer like hanging out in the backyard with friends and family and grilling out and enjoying some good food! Let's all post recipes that we love to have during the summer ... and let's try really hard to post pictures of the finished product if we can because you know how much we all love photos. And with food photos... we'll be pretty much guaranteed to try out each other's recipes.

Okay I'll start. This probably isn't typical "outdoor bbq food" but everyone loves something sweet after a meal and I like to bring these... they're light and refreshing for summertime!
Cherry Cheesecake Cupcakes
24 vanilla wafers
16 ounces cream cheese
3/4 cup sugar
2 eggs
1 tablespoon lemon juice
1 teaspoon vanilla
1 can (20 ounce) cherry pie filling
put the vanilla wafers into cupcake liners. mix and beat everything else (except the pie filling) together and fill 3/4 into the cupcake liners. cook 15-20 minutes @ 375 degrees. top with spoonfuls of the cherry pie filling... chill & serve
Here's a picture of when I made them for a surprise party-
They're easy to make and easy to eat b/cc you don't need utensils so it's perfect for out back by the pool and since they're chilled they cool you off too!

Tonight I am making that eggplant parm recipe I posted the other day!! I'll repost the recipe and pictures after the finished product tonight!! I've been actually thinking of starting a food blog!
ETA: Its too hot here to sit outside and grill (DH won't buy me a pool  ) so most of the stuff I post won't actually be "outside by the pool BBQ food" hehe

I love making homemade potato salad:
sorry its all yellow, yes there is mustard in it, but my kitchen lights are yellow *the covers...* Hope it looks good...
5-8 Large potatoes
4 Hard boiled eggs
3 dill pickles
3-4 Celery stalks *or hearts if you want*
1 Cup Mayo
1 Cup Sour Cream
few Tsp Mustard
Garlic Salt
Black Pepper
Paprika for taste
Toss it all together and walla! This one I made is a bit soupy, but I needed to use up the rest of the sour cream.

We are having Salmon tonight with grilled potatoes and grilled zucchini & squash. I will try to take some pictures if I remember and get a chance.
Shannon, those look soo yummy. I remember you posting something about them before. I plan on making a cherry cheesecake for the 4th of July and I might have to try these.

I'm wanting to post recipes with pictures to make this more interesting, lol... so I'll share another one with pics I have from the surprise party I threw. You might remember these since I posted before.
But here's a recipe for RASPBERRY LEMONADE! With a twist... and the twist is, you can only drink it if you're not pregnant!
1/4 citrus vodka - 1/4 raspberry pucker - 1/2 cranberry juice with a lemon twist!
You can mix it all up in a big pitcher and chill it so it's easy to fix/serve in big batches. And you don't have to mess with a blender!
Added bonus -- they match the cherry cheesecakes!

Oh, and as I previously stated a million times, I don't cook worth crap, so I usually offer to bring baked beans with brown sugar.. or Fruit Salad. Or dessert, because I can buy that.

Shannon, I'm going to try those. I have a silly question about the wafers. Please forgive me but I'm not a baker. Did you crush the wafers or were they circle wafers??? I know that when my sister makes cheesecake, sometimes she crushes graham crackers/digestive cookie crackers to make the crust, so I was just curious.

They're just vanilla wafer cookies and I just drop them into the bottom. Since they're still whole it makes eating them without utensils much easier I think.
If you make em... you gotta post pictures!

I've never seen those wafers here but I'll check for something similar when I go shopping at month end. I'm going to do them when me nieces come over later in the summer.

Eggplant Parmesan
All of my ingredients (milk, egg, bread crumbs, 1 eggplant, 1 jar classico tomato and basil sauce, 2 cups shredded mozzarella cheese)
Peel and slice eggplant
Mix egg and milk together, dip eggplant in milk mixture
Season bread crumbs to your liking (I use Tony Chachere creole seasoning & Garlic powder) cover eggplant with bread crumbs and put to the side!
Fry the eggplant in vegetable oil (you can broil eggplant in oven if you'd like)
Fry until it is nice and dark and crisp!
Place a layer of eggplant in baking dish
Pour a layer of sauce onto eggplant.
Sprinkle about 1 cup of the cheese ontop
Repeat this process, I usually have enough to make two layers!!
Bake at 400 degrees for 20 minutes (or until cheese is melted)
Finished Product!
Sit and enjoy!!
