July 9, 2009. I'm off of work for a month, so I'm playing the role of domestic goddess at the moment...

Wake up (I was actually up about 15 minutes earlier than this, but was tidying the bedroom and forgot to take the picture):

Bathroom:

Laugh at the dogs playing on the bed (Zuul is the pekingese, Brodie is the bichon):

Not high quality belly shot of me before showering, putting contacts, getting dressed, etc.:

Let the dogs out:

Check e-mail and JM real quick:

Make breakfast:

Do dishes:

Vacuum nursery (that I painted the day prior):

Watch a cooking show on Food Network:

Do three loads of laundry:

Make lunch for Jer and myself:

(I'm usually healthier than Noodles N Sauce, but we need to go grocery shopping and it's slim pickings right now).

Hang pants and delicates on the clothes line (yes, I have a clothes line! I bought it for my cloth diapers, but use it for a few other things as well):

Fold other laundry that came out of the dryer:

Preheat oven for dinner:

(man is that dial dirty! I never even realized!)

Get dinner in oven (leftover beef enchiladas from a few days earlier):

(mmmm... cold enchiladas )

Put away laundry while dinner is cooking/before Jer gets home from work:

Kick my feet up and watch half of another cooking show on Food Network:

Jer got home... Dinner is ready!:

(Again, not the healthiest meal in the world - I wish I would've done this on a day where I didn't eat so much cheese, hahaha).

We put the crib together!!!!!

We then watched TV for about an hour or so... At 9:12 we went upstairs for bed, at which time I read, we talked, and Jer felt the baby move for awhile. Sorry, no pictures of any of that. Jer probably would've been like "***?!"

I actually went to bed at 10:08 p.m. Yes, I looked.

Most of it is in the mail right now... At the moment I only have three bumGenius one size diapers in person. I ordered a ton of stuff a few days ago, so I'll post pictures after I get them.

As for the beef enchiladas recipe, I'll share it below. Keep in mind that it is so not authentic! I've made the authentic kind, but these are waaaaaaaaay easier. My mom used to make them when I was a kid, and judging by the ingredients I'm guessing she got the recipe off the back of a Hormel chili can.

Beef Enchiladas

1/2 lb ground beef
1/2 small onion (1/2 cup), chopped
2 cloves garlic, diced
1 can Hormel turkey chili, no beans (regular canned chili w/o beans works just as well)
1/2 tsp cumin
10 corn tortillas, fried in a little oil to soften (make them pliable for rolling)
1 cup shredded cheddar cheese

Brown meat 2/3 of the way, add onion and garlic, finish cooking meat. Add chili, cumin, and a couple tablespoons of water. Simmer 15 minutes. Reserve 1/3 of the mixture. Roll the rest into the corn tortillas with a little cheese sprinkled inside of each one. Secure with toothpicks and place into a sprayed baking dish. Top with the rest of the meat mixture and cheese. Bake 10-20 minutes, until heated through and golden brown on top.
