this weekend we are having a family reunion at the lake and I am bringing appetizers, we are leaving thursday afternoon but I work nights and am busy tomorrow afternoon which means that I have to go to the grocery store and start cooking like now, b4 I go to work at 11p

the thing is that we are going to be eating these on a pontoon so they need to be cold, not messy and not red something that can just be popped into your mouth
any ideas are greatly appreciated

What about hummus and pita chips? Or picking up some frozen shrimp & cocktail sauce for shrimp cocktails. Theres always cheese and crackers. You could do a 5 layer mexican dip with chips. Deviled eggs are always good too.

I'd bring deviled eggs and then cream cheese & salsa roll-ups (you take cream cheese and mix it with salsa until its the way you want it to taste and spread it over soft tortillas, roll, then put in the fridge and slice up bite size) and probably my cherry cheesecake cupcakes. They all travel well and can be put in a cooler to keep chilled before serving and are all finger foods. Here is the link that has the recipe to the cheesecakes-

One of my fav appetizers is spinach dip in a sourdough bread bowl. Super quick- you can even make it the night before and put it in the bread bowl right before you leave.
