DH's office was incredibly generous and thoughtful for our wedding. So I wanted to go beyond the typical thank you cards given. I figured the best way to really say thank you is to bake them some goodies using some of the gifts they gave us.
I want to make easy to serve stuff, like cupcakes and cookies. Okay I'll admit my real motivation for that is so I can try them before I send them off to make sure they aren't disasterous!  I haven't baked in a long time because I didn't have anything to bake with. I do now though!
Anyway, so I need some ideas beyond cupcakes and cookies. I want to wow them, maybe make them something they've never had before. He works in an office full of Europeans who are all well travelled, so that might be kinda difficult! Any ideas?
Oh! And his boss was SUPER generous, and I would like to do something special just for him, but I have no idea what to do. Any ideas for that too?

You said cupcakes but I have a muffin recipe that is really good, fast, and easy! They taste soo yummy.
To Die For Blueberry Muffins - All Recipes
To Die For Blueberry Muffins
INGREDIENTS (Nutrition)
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

..DIRECTIONS
1.Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
2.Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
3.To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
4.Bake for 20 to 25 minutes in the preheated oven, or until done

I would go for a cheese cake. They are really quite easy to do and you could do different varieties (chocolate, cherry, pumpkin, choc chip). It's also a bit more 'European', versus the more American cakes with frosting. I'm not a wonderful baker but cheesecakes tend to turn out well for me.

Do a cake with fondant. It's really easy and you can decorate it amazing. I just made my first one, and other than it being messy, it was easy and fun!!! Let me know and I will give you a cheaters fondant recipe!!

Going off these ideas... I think a big basket of the muffins for the office would be great. Then a special cheesecake (cherry maybe? YUM) for the boss to take home to his own family. I'm not a baker but I think this is a great idea! Good luck, let us know how it all turns out.

Being European my self; I love me some cheesecake!
So i would probally make one of them; Banoffee cheesecake is a favorite of me and my friends!

I'm all for the cheese cake and you can do so many different kinds or just different toppings. Kinds - white chocolate, dark chocolate, regular, etc. I love white chocolate cheese cake! Toppings - cherry, strawberry, blueberry, etc.

Those are some great ideas! Thanks ladies! I didn't even think about a cooking board on here.
Those muffins sound delish. They sound much like the muffins that were served at the bed and breakfast on my wedding day. They were SO GOOD! I didn't know muffins could taste that good.

omg i agree with Emma, Banoffee Pie is THE BEST THING EVER ON THE PLANET.
lol i had it for the first time in malta and i ate a whole piece, and i can never finish my dessert. i probably could have eaten another whole piece too, it is literally that good.

it's like eating a pie, if it were made in heaven.
its like light tasting, and not super super sweet, its not realllllly rich like cheesecake more light which is why i like it so much i think. if the guy is european i think he would appreciate it.
it has a layer of crumb crust, then a layer of creamy toffee, then a layer of bananas, then a layer of whipping cream, then a layer of finely grated chocolate. the one i had tasted like the choclate was milk chocolate, though it says to use dark chocolate.
