I just made this roasted butternut squash soup.....mmmmmmmm it made me feel good just eating it!
I actually felt less nervous and just better in general The power of good food!

Butternut and Apple Harvest Soup - All Recipes

Exceptions: I roasted the squash whole beforehand, and subbed celery for the leeks. Topped with fat free sour cream and fresh parsley.

You know... I have cooked with butternut squash twice now and both times it was a flop! You must be an expert! Soup does sound good in this cold weather.

it was a smallish organic butternut squash, and all i did was poke some holes in it with a fork and roast it at 400F for an hour, then let it cool. (i was bumming around the house so i just put it in during the day) that was the first time i have cooked a butternut like that, but i think thats how i will do it from now on. super easy to cut it in half and the seeds & flesh scoop out easy too.
