DH has band practice...so I think I am just going to have a turkey cheese sandwich and corn with a glass of milk. I know I will munch on something else....just not sure what.

I'm having leftovers from last night since I have to work tonight. but I'm having curly veggie pasta with cauliflower, it's baked with cheese sauce and breadcrumbs (like baked mac and cheese with cauliflower mixed in). and a mixed salad.
The pasta was so good. all i did was cook the pasta and cauliflower, mixed it together and put it aside to make he sauce. only ingredients in the sauce were margerine, flour, milk and some spices (parsley, chili powder, garlic powder and pepper). then poured that over the pasta and cauliflower in a oven safe dish. topped with breadcrumbs, baked for about 8 minutes at 375, finished off by broiling it to crisp up the crumbs.

i'm doing a braised roast in my crock pot: potato, carrot, onion, garlic, mushrooms under the roast, rub roast with montreal steak spice, sear all sides then put on top of veggies in crock pot. I put in almost a full bottle of white wine too cuz that was all i had and about 1.5 cups of boiling water with a chicken bouillon cube dissolved in it. we'll see how it goes!
making a new butternut squash side dish to go with it:
Ingredients
1 butternut squash - pre baked whole
1/2 cup vanilla yogurt
1/2 cup finely chopped onion
1 egg, lightly beaten
1 teaspoon brown sugar
salt and pepper to taste
1/4 cup crushed saltine crackers
2 tablespoons grated Parmesan cheese
1 tablespoon butter, melted
Directions
Preheat oven to 350 degrees F (175 degrees C).
Sautee onion in some butter. In a large bowl, mash the softened squash. Mix in the yogurt, onion, egg, brown sugar, salt and pepper. Pour the mixture into a 2 quart baking dish.
In a medium bowl, mix together crackers, Parmesan and butter. Sprinkle over the squash mixture.
Bake uncovered in the preheated oven for 35 to 45 minutes, until the topping is lightly brown.
plus a green salad.
dessert:
apple crisp is in the oven right now (mmmm starting to smell good).
today is use up all the fresh produce day cuz i get my organic delivery tomorrow!

Taco salad for Daddy, Mommy and Curtis. Pasta, mixed veggies and taco meat for Dustin. Curtis usually asks for some pasta too
brown ground meat, add onions and cook some more. Then add taco seasoning and water, bring to boil and then simmer until whenever hahaha
Then James throws lettuce, whole wheat tortilla wrap ripped up, tomatoes, and cheese with the meat. Then ranch dressing on top.
I do the meat on pasta with tomatoes, cheese and ranch dressing.
Curtis does a bit of everything haha.

barn night means we feed horses at 6pm, and finish up barn chores (feeding, bring in if horses are out and blow out the isle ways of hay and debree) And I clean caly's stall and work with her. We do this twice a week and sunday's we actually clean all the stalls as well - so by the time were done its like 7:30 and its late so we grab a fast dinner so kids can be in bed by 8:30

We are having a seafood pasta thing. It's shrimp and scallops with a cream sauce. I'm going to make some broccoli and a salad too.

you know what's good to make a "dressing" for taco salad? just a little bit of sour cream and salsa mixed together.

Leftover Shrimp Creole with corn on the cob.
I semi used a recipe but here's my own recipe for it.
1/2 large green pepper chopped
1/2 large red pepper chopped
1/2 large yellow pepper chopped
1 medium onion chopped
1 garlic clove chopped
2Tsp butter
1 c. chopped celery
16oz can diced tomatoes
small can tomato paste
2 bay leaves chopped
1/4 tsp basil
1/4 tsp thyme
1/4 tsp cajun seasoning
1/4 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
1/4 cup water (or substitute with extra can of diced tomatoes)
1lb shrimp
2 cups cooked rice
Saute green, red and yellow peppers, garlic and onion in butter for about 10 minutes in a skillet. Add shrimp, water, diced tomatoes, tomato paste, salt, pepper, chili powder, celery, bay leaves, basil, thyme, cajun seasoning and bring to a boil for 5 minutes stirring occasionally to cook shrimp. Turn heat on low and simmer for 15 minutes, stirring occasionally. Serve with cooked rice. Serves 4-6 people.
It was D-E-L-I-C-I-O-U-S!!!! I cant wait to heat it up tonight.

They are already cooked beans so i basically cook down some onions then add my can of beans, add a little water to thin them out, add all my seasonings, let them cook on low for like 30 minutes then they are good to go!!
