Can anyone recommend a good cake recipe for Henry's birthday?

I'm looking for a tasty recipe for low sugar cake and icing

Me too! I need to do a trial run like SOON for his smash cake. I got cake decorating stuff from my MIL but I've never done this before.

I am not sure if Matthew is okay with dairy so I'm thinking I may have to use rice milk in place of regular milk.

Ah I just googled and wholesomebabyfood to the rescue! Healthy Baby's First Birthday Cake Recipes, Sugar Free & Egg Free Baby's First Birthday Cake Recipe Ideas

I'm not sure I dig any of those frostings though.

I did this recipe (carrot cake): Carrot Cake | WholeFoodsMarket.com for Oliver's cupcake on his first birthday. I've made it as a cake too and it's good.

I tried to make a from scratch yellow cake on a test run and it was awful gross.. straight in the garbage!

Yeah, I looked at that site too. I was wondering if anyone actually made them.

I thought about buying a cupcake from the local bakery. More sugar but at least homemade and less preservatives, KWIM?


Anyone know gluten free cake recipes?

I had checked out the recipes on Wholesomebabyfood too but then opted to have cupcakes made. Didn't matter for the little missy since she does not like cake. It's so weird but she won't eat cake at all.

I like the carrot cake recipe from Resi's site too.

Haha I do the same as Aimee. Boxed cake mix all the way. A couple eggs and some oil haha.

This is the cake I made for Landen's first b-day! It's sugar, dairy and egg free.

Apple Spice Cake

Ingredients:
1/2 cup molasses
1 cup applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp baking powder
1/2 tsp baking soda
1-3/4 cup flour
1 tsp ginger

Directions:
Preheat oven to 350° F. Mix the molasses and applesauce in a large bowl. Add remaining ingredients, blending well. Bake in a nonstick 8 x 8-inch baking pan or one sprayed with a non-stick spray for 30 to 45 minutes.

The icing does have cream cheese in it but I just put a very thin layer of it on the top of each cup cake.

Cream Cheese Frosting
½ cup apple juice concentrate
1 pound light cream cheese
2 tsp vanilla extract
½ cup finely chopped raisins
1 ½ tsp unflavored gelatin

Directions:
Set aside two tablespoons of the juice concentrate. Then, mix the remaining juice concentrate, cream cheese, vanilla and raisins in a blender or food processor until smooth. Transfer to a mixing bowl and set aside. In a small saucepan, stir gelatin into the remaining juice concentrate. Let stand one minute; then heat to boiling, stirring to dissolve gelatin. Beat the gelatin mixture into the cream cheese mixture until well blended. Refrigerate for 30 to 60 minutes to set frosting. The recipe makes enough to frost one double-layer cake.
