Now that I have Charlotte I want a good camera to take pictures of her with! I want an entry level DSLR, if there is such a thing. I don't know much about photography and am definitely a point and shoot using beginner. I want a camera that I can use as a beginner but grow with as I learn. I want it to take awesome pics and have a good reaction time (with the camera I have now, the pic I see when I press the button to take it and what I end up with are very different, which sucks with a squirmy baby). What brands do you recommend? Any I should stay away from? Any specific models you can recommend? I'm willing to spend up to $1500 but would like to keep it closer to $1000 total for camera, lens, case, flash, etc. to give you an idea of my price range, but I have no idea how much is too much for my purposes. TIA!

Krista honey I noted this in another post - but for goodness sakes at least delete the preggo ticker in your siggy - Charlotte is here already!!! 
We got the Nikon D3000 and my sis has the D5000 - both good for beginners....I highly recommend it - in your price range (under $1000) super easy to use (it has an auto guide mode) and takes beautiful pics!

Canon T1i is what I would buy if I were you  Great camera!! You should be able to find it in a kit (includes everything you will need) in your price range.
The best thing about DSLRs is the "reaction" time- they are nearly instant. A wiggly baby is not match for it. haha.

I have a Canon Rebel (XTi, I think), and I love it.
The thing I can recommend the most though is just taking a basic beginners photography course. I knew a fair amount about cameras but I was still finding some of the concepts of being able to control ISO, shutter and aperture a little difficult. I spent $90 on an intro course and it helped more than reading ever could!
All those "extra" settings (like style modes and priority modes) are mostly just selling features and will cause you more headaches than learning to use the Manual Mode.

Which kit would be enough for someone who just wants to take good quality pictures of their kids?

What is the difference between the T1i and the xti?

I think that both of the above cameras are a good choice. You'll get quality photos if you know how to use it. For fast moving kids, you need to know how to set it so you have a quick shutter speed but a proper aperture as well as to get enough light captured to make the picture work out. It's more about the user and less about the camera.

I have the Canon Rebel XS, it's great..I'd say go with the XSi though, and get the kit lens, plus maybe a 50 mm lens, and such.

Another question. Do I need that add on flash for GP family pics or will the built in one do? What's the difference and under what conditions would you use the extra one?

An external flash will be beneficial (especially with a difuser). They are more adjustable. Rather than shooting the flash directly at the subject and creating harsh shadows and blowouts, an external flash can be positioned to bounce off a wall or shot above subjects to create softer lighting.
The flash can be used in a variety of situations. They're good for outside shots where bright back-lighting is confusing the camera and causing it to pick up too much light from the background and causing the subject to be too dark. It can also bring out colours better in really bright situations too.
