What are your dinner plans?

I'm trying a new soup for the first time. It's Carrot Tomato Soup SouleMama: Our Carrot Tomato Soup. We are going to have sourdough grilled cheese along with it.

mmm sourdough grilled cheese!

I really don't known what's for dinner... I flipped through some cookbooks early today with the intent of going to the store while MIL was on granny-duty but I never decided.

We've been doing weight watchers for a while so it makes dinner planning more of a chore for me b/c I have less freedom in what to make. I actually started a topic similar to this in my PR an hour or two ago to try to get some ideas, lol.

When my MIL was here she made some stuff for us to re heat. Tonight is a mushroom/ground beef mixture over fresh pasta. Not too sure what's in it, onions and spices and stuff... I'm sure it will be good. I might make a garden salad to go with it. James was given some fresh home grown tomatoes from one of his co workers wife I want to use them up and see how they taste, they look yummy!

Does your Granny eat dinner with you each night? Do you have to consider her when cooking or does she eat anything you make? Can she still help with cooking?

DH saved the day and this is what we're making and having for dinner. I posted it a couple years ago in WTTC's recipe subforum so this is just a C&P:

Weight Watchers Deep Dish Pizza Casserole

* 1 pound ground round
* 1 (15 ounce) can chunky Italian-style tomato sauce
* Cooking spray
* 1 (10 ounce) can refrigerated pizza crust dough
* 1½ cups (6 ounces) preshredded part-skim mozzarella cheese

Preheat oven to 425°.

Cook meat in a nonstick skillet over medium-high heat until browned, stirring until it crumbles. Drain, if necessary, and return to skillet. Add tomato sauce, and cook until heated.

While meat cooks, coat a 13 x 9 inch baking dish with cooking spray. Unroll pizza crust dough, and press into bottom and halfway up sides of the baking dish. Top the pizza crust with meat mixture.

Bake, uncovered, at 425° for 12 minutes. Top with cheese, and bake 5 minutes or until crust is browned and cheese melts. Cool 5 minutes before serving.

Yield: 6 servings. Each serving is 6 Weight Watcher's points.

We add onions, mushrooms and peppers to ours.

Yes she eats with us and yes we have to consider her. She can't eat corn, rice, seeds or nuts - anything that can trigger diverticulitis. Basically stuff that doesn't break down and can get stuck in pockets in your intestines. Since she's "lost it" a little she has taken this to extremes and thinks she can't eat seeds in cucumbers, squash, tomatoes, etc. even though the seeds on the no no list are things like sunflower seeds or popcorn kernels, etc. But we can't convince her she CAN eat those things, she's stubborn and doesn't believe us so I try not to put those types of food on her plate or we'll deal with a 'fight' about it. She can help do some things, but it takes her a lot longer so its really more a favor to her to keep her busy than us, kwim? I'll have her peel potatoes or put things back in the cubbord, dry dishes etc but it takes wayyyy longer having her help. She's kind of more in the way but I want her to feel needed and included.

Who knows. It's our wedding anniversary and we have nothing to make in the house so I'm not sure what we will do.

The WW pizza looks good! I might have to try that next week. I'll use Italian Chicken Ground Sausage instead though..

Shannon, I think it's awesome what you are doing by having her Granny stay with you. I'm not sure I could handle my Opa. It would be very hard dealing with his ways for sure.

We had tacos and refried beans. The meat was too spicy for DD, though, so she ate everything else and then had 2 sugar plums for "dessert" to make sure her tummy is full enough.

It was very good IMO. Oliver wouldn't touch it though.

I have no idea what I'm making tonight. It was going to be stuffed peppers but I took the frozen ground turkey out to late.
