I have a few that I rotate. I don't like cooking haha.

Taco Salad
Honey Garlic chicken with Rice and Corn
Honey ham with scalloped potatoes and cream corn
seasoned chicken with rice and corn
chicken any style but with fresh garden salad
bbqed hamburgers with salad
bbqed farmer sausage with salad and/or rice and corn
fetticini alfredo (either shrimp or chicken)

Hmmm.. I think that's all I make regularly lol.

Greek Pasta: SUPER easy and fast

Penne Pasta
Chopped spinach (I use frozen)
Pinto Beans
Diced Tomatoes
Feta or grated Parmesan cheese
Garlic
Basil



Salmon Pie

1 can of pink salmon (just pick out the spine, the other bones will melt)
a few pounds of potatoes
butter and milk (to make mashed potatoes)
pie crust (sometimes I make my own, sometimes I buy it)

Mix salmon and mashed potatoes. Add into pie shell. Bake at 350 for 30-40 minutes until crust browns.

Lemon-Caper Chicken, Mashed Potatoes, Roasted Brussel Sprouts
Blackened Salmon, Asparagus Risotto
Stuffed Peppers, Salad
Whole Baked Chicken, Mashed Potatoes w/ Gravy, Veggie varies, Rolls
All kinds of soup
Italian one night and mexican another during the week.
Salads are usually part of our dinners too.

We're not dinner persons. We usually have a big lunch and then something light for dinner.

But my fave meals I like to make are:
- Shrimp pasta with veggies in alfredo sauce. I make my own sauce.
- Lasagna
- Rice stir-fry with chicken
- Creamed potatoes with a shrimp sauce (I make it and it's somewhat like sweet & sour shrimp sauce)

I don't really have any favorite meals. My husband has some that I cook, but there are so many. But I know the boys love my homemade pizza. Or my homemade french bread pizza, they won't eat store bought bread.

Baked ziti~ I boil a box of pasta, cook some ground turkey. Put that in a big bowl together with a jar of tomato sauce and two cans of chopped tomatoes. Add some shredded mozzarella cheese. Mix it all together and then pour into a pan and cover with more cheese. Bake until bubbly. (Lately I've been making it more healthy by cutting up green peppers, squash, zucchini, & an onion. I stir fry the veggies on a pan with some olive oil and add them to the sauce).

Salad night~ I boil some pasta and cut up fresh veggies (pretty much anything will do: peppers, cucumbers, celery, carrots, tomatoes, avocados, etc etc) Add some chicken, corn, beans, and cheese. I keep everything separate and my husband and I make our own plates and use whatever salad dressing we want. It might sound "light" because it's a salad but we end up making HUGE salads out of everything that's out and we are so full with healthy stuff.

Black bean burgers
~ We buy them from Costco. They are really healthy, delicious & so easy. I just cut up tomatoes, onions, avocado, etc. and put it on them like a regular hamburger.

Fajitas~ Just cook some chicken with a chopped onion and green pepper.. Add some seasoning. Spoon it into tortillas and add tomatoes (or salsa), sour cream, cheese, avocado, etc.

My favorite things to make are:

- chicken quesadillas (pesto fajita wrap filled with chopped mushrooms, roasted chicken and sometimes spinach, oh and lots of cheese)
- chili (spicy)
- roast chicken with mashed potatoes and peas
- roast beef, mashed potatoes and asparagus (when it's in season)
- green salad with boccoccini cheese and tomatoes (simple but SO good)
- parmesan chicken (we call it special chicken when my dad makes it because it is SO good and he won't tell anyone the special way he makes it that is always better than mine lol but mine's pretty good...)

I make a good spaghetti sauce.

I also rotate a few of my favourites: tuna casserole, shepherd's pie, pork chops with roasted potatoes, red lentil soup, mexican rice casserole.

Curried lentils with quinoa Cook them the lentils and quinoa seperatly in boiled water. When the lentils are almost cooked but still a bit waterly, add in curry powder, salt, and pepper. When lentils are done, add some sauteed onion and garlic. Sometimes I'll add in some spinach too. Put the lentil mixture over a bed of quinoa and top with some greek yogurt and rasins.

Cilantro Chicken Sautee chicken tenderloins in olive oil and lots of fresh garlic, once browned, add in generous amount of fresh chopped cilantro and finish cooking, add salt and pepper. I'll sometimes add the chicken to a salad of eat it with sides of veggies.

TabouliFinely chop a couple bushels of parsley, add in a couple chopped tomatoes, green onions, mint, cracked wheat (I soak it in hot water while I'm chopping everything else to soften it). Toss in salt, pepper, lemon, olive oil

EggsScrambled up with whatever veggies and cheese we need to use up.

Turkey pasta I'll sautee whatever veggies we have (mushrooms and onions are a must, plus whatever else we have) with some ground turkey, add to a jar of red sauce, serve with whole wheat pasta.

Salads We eat salad with almost every meal, sometimes as a meal. I make a simple dressing. In a motar/pestal bowl, smash a couple cloves of garlic with generous amount of salt until it makes a creamy paste. Add to made salad. Add the juice of a couple lemons and some olive oil. Toss very well. Soooo good.

Salsa Chicken - Put 3 boneless/skinless chicken breasts in crockpot, season with a packet of taco seasoning, pour a jar of salsa over chicken (which ever kind of salsa you like) cook on high for 4-6 hours until chicken is falling apart/shredding.. After chicken is shredded mix in a half cup of sour cream, and top with some cheddar cheese (as much or little as you like) let it cook together on low for about 30 minutes.. Serve on tortillas or by itself with some mexican rice and refried beans!!! This is sooooo yummy!!!

Chicken Alfredo - I use jar alfredo sauce

Spaghetti - I make my sauce using 1 can tomato sauce, 1 can of diced tomatoes & 1 can tomato soup.. I cook down an onion and some fresh garlic in olive oil, add all my cans of stuff.. Then I season it with garlic powder, creole seasoning, italian seasoning (which has a ton of stuff in it) parsley, and I'm sure I throw other stuff in it!! lol.. I usually add meatballs and then serve over some pasta!!!

Red beans - I use can beans

Roast - I cook my roast in the crockpot, I make a gravy with onion soup mix that I pour over it and I usually cut up baby carrots and potatoes to put in with it! Cook it on high for like 6-8 hours until its falling apart!!!

Chicken enchiladas
Pork chops & greens beans
Cubed steaks & mashed potatoes

These are my regular things I cook, but I do try new things a lot of times!!!

Haha it's fake, but we like it I pan fry chicken breasts and cut into strips then add honey and garlic powder, sometimes real garlic haha.

DH does most of the cooking... I'm not very good at it my favorite thing that he cooks are chicken enchiladas with mexican rice and tacos with homemade shells (FIL is straight from Mexico so dh has learned to cook some amazing mexican food!)
When I do cook, its usually one of the following with steamed veggies and/or a salad on the side:
A Turkey in the crockpot with mashed potatoes
Chicken sausage & turkey kielbasa baked in the oven & boxed potatoes
Whole wheat pasta with jarred sauce and turkey meatballs
Lasagna (recipe off the barilla no boil box but with ground turkey and low fat cheese)
Shake'n'bake pork chops & boxed potatoes

Anyone have any tips on good homemade mashed potatoes or making veggies tasty?

Mashed potatoes are so simple. Peel, cut, boil. Mash with butter & milk. Sometimes I use cream instead of milk. You can add a little salt and pepper to give it more flavor. Sometimes I add sour cream and shredded cheese. I prefer either red potatoes or yellow.

I do a lot of home cooking - With me being a SAHM I dont see reason to us eat processed food all the time(maybe once or twice a week we will have oven chips). These are just a few of my favorites as we do try new things all the time

Steak and Mushroom pie with new potatoes or Mashed Potatoes and veggies

Wholegrain Spagetti Bolognase - I make my own Bolognase sauce

Chicken Wrapped in bacon with soft cheese with oven chips and side salad (we normally have this on a Wednesday as thats my cheat day on my diet)

I'm going to try this! It sounds like a good recipe b/c we almost always have chicken and salsa around. I've a pack of taco seasoning forever too that I've been meaning to use up.

I'm totally late getting in on this thread... but add some cream cheese to your homemade mashed potatoes. Not the most healthy thing so I only do it occassionaly, but sooooooo yummy.
