Share your fall/pumpkin Recipes!!!!!




Banana pumpkin Shake-
1-cup milk
2 tablespoons canned pumpkin (or homemade puree pumpkin)
1 banana
dash of cinnamon
Directions:
Blend in blender until smooth and foamy.
Serve immediately.

I'm pretty well-known for my Apple Crisp recipe, everyone always asks me to make it.

Kate's Apple Crisp

Ingredients

Filling:
10 medium Granny Smith apples, peeled and sliced
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg

Crust:
2 cup quick-cooking oats
2 cup all-purpose flour
2 cup packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup butter, melted

Directions
  1. Preheat oven to 350.
  2. Place the sliced apples in a 9x13 inch pan. Mix the white sugar, flour, cinnamon, and nutmeg together and sprinkle over apples.
  3. Combine the oats, flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
  4. Bake at 350 for about 45 minutes.

My favourite cookies:

Super Soft Pumpkin Chocolate Chip Cookies. Easy to make and oh-so-good. I haven't made them this year yet though.

I just made apple sauce, which is something I like to make in the fall. No recipe though, it's just apples, water and a bit of cinnamon. Yum.

mmmmmm

kate i just made your apple crisp, it looks/smells AMAZING!! I used golden delicious though, cuz that's all i had (and i had a LOT of them! still have more actually...)

i made these muffins two days ago and everyone loves them!

erm......pumpkin spice creamer in my coffee???

No seriously I have a pie to add - my mom found it in the local paper when the baker died, the paper shared his family secret recipe - I LOVE THIS PIE!!!

Here is one of Mr. Palaske's favorite pie recipes:

PUMPKIN PIE
2 large eggs, lightly beaten
1 teaspoon vanilla
1 16-ounce can pumpkin
1/2 (I believe...recipe on the computer has it in codes for some reason) cup golden or dark brown sugar

2 teaspoons Special Seasoning (rec-* ipe follows)

1 cup evaporated milk
Yt cup half-and-half

Yt cup granulated sugar 19-inch unbaked pie shell

Mix together the eggs, vanilla, pumpkin, sugar and seasoning mix In a saucepan, mix the evaporated ' milk, half-and-half and sugar; cook over low heat until sugar dissolves. Add to the pumpkin mixture. Pour into pie shell and bake at 425 degrees for 15 minutes; lower heat to 350 degrees and cook 25 minutes. Store in the refrigerator. Makes 6 to 8 servings.

Special Seasoning: 4 tablespoons ground cinnamon

2 tablespoons ground allspice
2 tablespoons black pepper

2 tablespoons salt 1 tablespoon ground nutmeg 1 tablespoon ground cloves 1 tablespoon ground ginger

Mix cinnamon, allspice, pepper, salt, nutmeg, cloves and ginger together. Store in an airtight container for use in other baking. Makes about 1/2 cup.

Pumpkin Pecan Bars - Oliver and I made these together a couple weeks ago.

Ingredients:
•Cookie Crust:
•1/2 cup all-purpose flour
•1/2 cup rolled oats
•1/2 cup chopped pecans
•1/4 cup light brown sugar, packed
•1/4 cup melted butter
•1 teaspoon vanilla extract
•1/2 teaspoon ground cinnamon
•.
•Filling:
•1 cup pureed pumpkin
•2 large eggs, lightly beaten
•3/4 cup whole milk
•1/2 cup light brown sugar, packed
•1/4 teaspoon ground nutmeg
•1/2 teaspoon ground cinnamon
•1/4 teaspoon ground ginger
•.
•Topping:
•1 small package (3 ounces) cream cheese
•1 cup confectioners' sugar
•2 teaspoons vanilla extract
•24 pecan halves

Grease an 8-inch square baking pan.
Combine cookie crust ingredients; press into the prepared baking pan. Bake crust for 10 minutes at 350°; place on a wire rack to cool completely.

Prepare filling. Combine filling ingredients; mix well. Pour over cooled cookie base; bake at 350° for about 40 minutes, or until set. Transfer to wire rack to cool completely.

Beat cream cheese at medium speet until creamy. Sift confectioners' sugar over cream cheese; add vanilla and beat until smooth. Spread topping over cooled filling. Cut into 12 bars and decorate with pecan halves.

So the Fall category doesn't really apply to me but we make pumpkin fritters here. The problem is that I make them from my head and am not sure of the correct measurements so I will look for a recipe and post that in a bit.

Kate I think I'll make your apple crisp sometime soon. I made applesauce and apple pies to freeze today and still have tons of apples!

*Disclaimer: I have not made this yet, but it is on my to do list!

Black Bean and Pumpkin chili

1 med onion, chopped
1 med yellow pepper, chopped
3 cloves garlic, minced
2T olive oil
3c ck broth
2 cans (15 oz each) black beans, rinsed and drained
2 1/2 c cubed turkey or ground turkey
1 can pumpkin (15 oz)
1 can diced tomatoes (undrained)
2t parsley flakes
2t chili powder
1 1/2 t dried oregano
1 1/2 t cumin
1/2 t salt

In large skillet, saute onion, yellow pepper, and garlic in oil until tender. Transfer to slow cooker. Stir in remaining ingredients. Cover and cook on low 4-5 hrs
