Since we were talking about favorite Thanksgiving Meals, share your favorite meals so that we could try them out.

As you know, we don't have Thanksgiving here but I'll share a pumpkin recipe which is a Barbadian favorite and I think it could be a hit for Thanksgiving.. I make mine on the fly and am not sure of the exact measurements but I found this one which should be great.

Pumpkin Fritters

Ingredients
(serves 6)
1 lb pumpkin, peeled
2 Tbls. sugar
2 Ozs. butter
2 Eggs, beaten
1/2 Tsp. nutmeg
1 Tsp. ground cinnamon
1 Cup flour
2 Tsps. baking powder
Salt to taste
Milk to bind
Oil for deep frying

Method
1.Dice 1/2 the pumpkin, cook until soft, and mash.
2. Grate other half of pumpkin and set aside.
3. Cream together butter and sugar.
4. Add eggs, grated pumpkin, nutmeg and cinnamon.
5. Sift together salt, flour and baking powder, add to mixture, blending well.
6. Add mashed, cooked pumpkin and mix until combined.
7. Add a little milk if needed to loosen batter.
8. Heat oil for deep frying in pot.
9. Fry fritters in spoonfuls until golden and drain our paper towels.
10. Sprinkle with sugar and cinnamon.
11. Serve hot.

Pumpkin Cheesecake...hmmmm...that sounds interesting. Definitely something I would try.

Pumpkin cheesecake is amazing and those fritters sound really interesting in a good way. Can't wait to see what other recipes people put up. I never cool for thanksgiving because we go to my parents house.

These are awesome

Roasted Garlic Mashed Potatoes//Pioneer Woman Cooks

Prep Time: 1 Hour | Cook Time: 15 Minutes | Difficulty: Easy | Servings: 8


* 5 pounds Russet Or Yukon Gold Potatoes, Peeled And Rinsed
* 3 heads To 5 Heads Roasted Garlic
* 1-½ stick Regular Salted Butter (3/4 Cup)
* 8 ounces, weight Softened Cream Cheese
* ½ cups Or So Half-and-half (Or Heavy Cream, If You're Feeling Naughty)
* Salt To Taste
* Black Pepper To Taste

Preparation Instructions

(Prep time includes time needed to roast garlic.)

Cut the peeled potatoes into pieces and cook in boiling water until fork-tender. Drain water and return to pot, and mash potatoes over low heat until lots of the steam has escaped.

Next, mash in softened butter, cream cheese, half-and-half, and salt to taste. Dump in three to five heads of roasted garlic cloves; stir together, then check seasoning. Be sure to salt adequately.

Add some fresh ground black pepper, and serve with one or two roasted garlic cloves on top. Serve with steak and expect to be worshipped and kissed for at least 38 hours.

Honey Butter for the rolls-
1 cup honey
1 cup butter (works best at room temp)
1 cup powdered sugar
1.5 teaspoons cinnamon

Bestest Ever Baked Beans:

4 cans pork n beans
1 - 1 1/2 lbs ground chuck browned
1C brown sugar
2T ketchup (more or less to taste)
1/2C diced onion
1/4C diced green pepper

Mix all together, bake at 375 until thickens and darkens (about 45mins-1hr)

Even those who HATE baked beans LOVE these!


Cornbread salad

1 box jiffy corn muffin mix
1/2 cup flour
1 large tomato
1/2 cup diced onions
1/4c diced green peppers
2c shredded cheese of your choice (I use colby jack)
Mayo

mix the corn bread as directed along with the flour (add a wee bit more milk)
bake until done then cool and crumble, mix in the remaining ingredients and add enough mayo to moisten it well (this could be 1/2 jar or more) chill then serve. It's soooo yummy!
