4-6 slices bacon
4 chicken breasts
4 cups frozen diced potatoes with peppers and onions, thawed (we used 6-8 fresh white potatoes, diced & 1 med onion, chopped)
4 oz shredded cheddar cheese
Cook bacon in large skillet on medium heat until crisp; Remove bacon from skillet to paper towel; discard drippings in skillet, but leave some of the grease to cook chicken in. Add chicken to skillet; cook until done. Remove chicken from skillet; cover to keep warm. Crumble bacon and add to skillet with potato mixture; cook and stir until heated through and done. Place chicken over potatoes; top with cheese. Cover; cook until cheese is melted.
Since we used vegetables, we put the diced potatoes and onions in covered casserole and cooked partially in the microwave, aprox. 10 min, stirring half way thru.
