I have been making this soup all winter and it's a HUGE hit with my family. It is a bit time consuming to make, but it's worth it!
Chicken Noodle Soup
1lb of chicken (I use chicken breast)
chicken broth or chicken base
Boil the chicken in water (or chicken broth) and add your seasonings. You can also add your vegetables while your chicken is cooking. Remove the chicken when it is done and let it cool. Add your vegetables now if you haven't already. Cut your chicken into cubes and add it back to your water. If you are not using chicken broth, add your chicken base to make your broth.
Simmer for several hours before serving
2 1/2 cups of flour
pinch of salt
2 eggs, beaten
1/2 cup of milk
1 tbsp butter (melted)
Stir together flour and salt. Add egg, milk and butter. Knead the dough and let rest. Roll it out and cut into small strips. (I use a pizza cutter for this and it works great) Add the noodles slowly and let cook for 30-45 minutes (depending on thickness). Serve soup hot and enjoy!
