I've been meaning to post this for a while - got it from one of the hosts on the Dec 07 PR and it is soooooo good!

Buffalo Chicken Dip

1-1˝ chicken breasts
1 box cream cheese (8 oz)
1 cup ranch or blue cheese (I do a half cup of each)
1-1˝ cup monterey jack cheese, shredded. (I can't find it shredded so I buy a block and shred it)
about 1/2 cup Franks Red Hot Wings sauce (not just plain Red Hot)



-Bake Chicken (like 30 min @ 350)
-While chicken bakes, leave the cream cheese out so it can soften.
-Shred cooked chicken (using 2 forks to pull it apart works well, or your hands lol)
-Mix everything together in one big bowl. Taste test the spiciness and add more Red Hot to your liking. I probably use just over 1/2 of a bottle and that's as hot as I can stand it lol
-Put it in a baking dish (I use a 9x13 glass one.. but I suppose it doesn't matter what you use) and heat for approx. 30 minutes at 350 or until it's bubbly.

That's IT. Put it in a pretty bowl and serve with tortilla chips and/or celery. You can serve it warm or cold- it's delicious both ways.

I always do a double batch because it goes fast at parties. I make it a day or two ahead of time and then I don't warm it up. I just cover and refrigerate until just before the party. Then I pop it in the oven so it's warm when people get there.
