2 cups uncooked spiral pasta (I used 3 cups)...penne can be substituted...I didnt have any spirals so I had to improvise
2 lbs ground beef
1 small onion, chopped
1 jar (26 oz) spaghetti sauce
1/2 cup sour cream
1/2 lb Velveeta, cubed
2 cups (8oz) shredded mozzarella cheese
Cook pasta according to package directions. Meanwhile, in large saucepan, cook the beef and onion over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce (you can add mushrooms if you would like); bring to a boil. Reduce heat; cover and simmer for 20 min. (I did about 10 min)
Place part of meat sauce in a greased shallow 2 1/2 qt baking dish. Drain pasta; place half over sauce. Top with half of remaining meat sauce; spread with sour cream. Top with Velveeta cheese and remaining pasta and meat sauce. Sprinkle with mozzarella cheese.
Cover and bake at 350 degrees for 25-30 minutes. Uncover; bake 5-10 minutes longer or until bubbly.
