3/4 c butter, softened (although we used coconut oil instead)
3/4 c. white sugar
3/4 cup packed light brown sugar
1 tsp vanilla extract
1 1/4 c. flour
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp salt
2 3/4 c rolled oats
3/4 c. raisins
1/2 c. chocolate chips
*Preheat oven to 375 degrees.
*In large bowl cream together butter, white sugar, and brown sugar until smooth.
*Beat in eggs and vanilla until fluffy.
*Stir together flour, baking soda, cinnamon, and salt in another bowl.
*Gradually beat dry mixture into butter mixture.
*Stir in oats, raisins, and chocolate chips.
*Drop by spoonfuls onto ungreased cookie sheets.
*Bake 8-10 minutes or until golden brown. Cool slightly and move to wire rack.
