EASY OVEN DRUMSTICKS

Ingredients:
- 1/2 cup butter or margarine
- 1 tsp. garlic salt
- 1/8 tsp. pepper
- 1 tsp. poultry seasoning
- 1/2 tsp. paprika
- 1 cup fine dry bread crumbs (I used ready made bread crumbs from the baking aisle...)
- 1/2 cup grated sharp cheddar
- 1/4 cup Parmesan
- 8 chicken drumsticks

Melt butter or margarine. Mix garlic salt, pepper, poultry seasoning and paprika with bread crumbs and cheeses. Dip each drumstick into melted butter or margarine. Coat each with crumb mixture. Place drumsticks in large shallow baking dish, making sure drumsticks do not touch. Pour remainder of butter or margarine over chicken. Bake uncovered at 350* for one hour or until chicken is tender.

Makes 4 servings.

We love this one too - especially since DH is a drumstick fiend. It was so easy too - washing and removing the skin from the drumsticks took longer than anything else. Found this one at FamilyFun.com too. Enjoy!

SIMPLE CHICKEN PARMESAN

Ingredients:
- 4-5 boneless, skinless chicken breast halves, pounded thin
- 2 eggs, slightly beaten
- 1 cup Italian seasoned dry bread crumbs
- 2 Tbsp. olive oil
- 1 jar (1 lb. 10 oz.) pasta sauce (I usually use Ragu.)
- 1 cup shredded mozzarella

Preheat oven to 400*. Dip chicken in eggs, then in bread crumbs, coating well. Arrange in 13x9 baking dish and bake uncovered for 20 minutes. Pour pasta sauce over chicken and top with cheese. Bake 10 more minutes or until chicken is thoroughly cooked.

This is my "someone is coming over and I need to cook something semi-nice" meal - everyone seems to love it. I usually serve it with a side of fettucini alfredo and breadsticks. Recipe is from Ragu.com. Enjoy!

Swedish Meatballs
Prep: 20 mins Cook: 30 mins Ready in: 50 mins Serves: 10

Ingredients
1/3 cup plain breadcrumbs
1/3 cup milk (skim)
1 small yellow onion, finely diced
1 egg (or egg white)
1 1/3 pounds lean ground beef
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon allspice
1 tablespoon butter
1 tablespoon extra virgin olive oil

Cooking Instructions
Soak bread in milk for 5 to10 minutes until the liquid is absorbed.

Add the onion, egg, lean ground beef and salt and pepper.

Mix all the ingredients together with your hands and shape the meat mixture into small balls, less than an inch in diameter.

If the mixture starts to sticks to your hands, wet them with cold water.

Heat a skillet and add butter and extra virgin olive oil. Saute the meatballs in 2 or 3 batches, turning them frequently to keep the meatballs from sticking. Drain them on paper towels.

Drain the excess olive oil and scrape off and discard any browned bits of meat that may be sticking to pan after the meatballs are done.

Add butter and flour and stir until it browns. Quickly add a can of beef stock and bring to a boil, stirring constantly until gravy thickens.

Remove from the heat and serve immediately with the meatballs.

For real Swedish Meatballs Lingonberry preserves, but it is optional

EASY CHICKEN POT PIE

Ingredients
- 2 frozen pie crusts
- 2 cups diced cooked chicken (I use canned to make this even faster!)
- 1 can mixed veggies, drained
- 2 cans Cream of Potato soup
- 1/2 cup milk
- 1/2 tsp. pepper
- 1/4 tsp. thyme

Line pie plate with one crust. Mix ingredients together in large bowl and pour into crust. Remove crimped edges from second crust and place on top of mixture. Make four slits in top crust with sharp knife. Bake at 375* for 40 minutes or until crust is browned.

CHICKEN CHIMICHANGAS

1/4 c. bacon grease
2 c. chopped or shredded cooked chicken
1 med. onion, diced
2 cloves garlic, minced
2 med. tomatoes, chopped
2 cans (4 oz.) chopped green chilies
1 lg. peeled, boiled potato, diced
1 tsp. salt
1 1/2 tsp. oregano
1 to 2 tsp. chili powder
2 tbsp. minced, fresh cilantro
12 lg. flour tortillas, warmed
Vegetable oil
Shredded cheddar
Sour cream
Guacamole
Salsa
Shredded lettuce, chopped tomatoes, sliced black olives

In skillet, melt bacon grease over medium heat. Saute meat, onion, garlic, tomatoes, chilies and potatoes; until onion softens. Add salt, oregano, chili powder and cilantro; simmer 2 to 3 minutes.
Place 1/2 cup meat filling on each tortilla. Fold envelope style (like a burrito). Fry, seam side down, in 1/2 inch of hot oil, until crispy and brown. Turn and brown other side. Drain briefly on paper towels.

Place on plate and top with shredded cheese, sour cream, guacamole and salsa. Place shredded lettuce around chimichanga and top lettuce with chopped tomatoes and sliced black olives. 12 servings.

15 minute chicken & rice dinner

1 tablespoon olive oil
4 skinless, boneless chicken breast halves
2 cans (10 oz ea) cream of chicken soup
1 2/3 cups water
tsp paprika
teaspoon freshly ground pepper
dash of garlic powder
dash of crushed red pepper
2 cups fresh or thawed broccoli and cauliflower
1 cups uncooked minute original rice



1.) In medium skillet over medium-high heat, heat oil. Add chicken and cook 8 minutes or until browned. Set chicken aside. Pour off fat.

2.) Add soup, water, paprika, pepper, garlic powder, and crushed red pepper. Heat to a boil.

3.) Stir in broccoli, cauliflower and rice. Place chicken on rice mixture. Season chicken with additional paprika, pepper, and garlic powder. Reduce heat to low. Cover and cook additional 5 minutes or until chicken is no longer pink and a meat thermometer reads 180 degrees.


Serves 4

Mexicalli Chicken Breast

Boneless chicken breasts
Jar of salsa
Bag of shredded cheese

Preheat oven to 375 place chicken in baking pan and spoon some salsa on top. Place in oven for 40-45 minutes. sprinkle some cheese over top and bake for another 5 minutes
Serve over rice!

I got this from another jm mom from midwest mommies board. I have made it twice and dh loves it.

Crumb Coated Ranch Chicken

2/3 cup ranch salad dressing
2 cups coarsely crushed cornflakes
1 tbs Italian seasoning
1 tsp garlic powder
4 boneless skinless chicken breast halves

Pour salad dressing into a shallow bowl. In another shallow bowl, combine the cornflake crumbs, Italian seasoning and garlic powder. Dip chicken in dressing, then coat with crumb mixture.

Place in a greased shallow baking pan. Bake at 400 for 30-35 minutes or until juices run clear.

* I tenderize the chicken with a meat tenderizer first.

I call this home made hamburger helper

you will need

1lb ground beef
noodles
cheese
sauce

brown the meat in a frying pan
cook the noodles like it says on package
add the meat and noodles to a casserole dish
add cheese and sauce
cook at 350 degrees
for 15-20 minutes until cheese is melted.
