Let's post all of our casserole recipes here!

I'll add an index in this top post as entries are added so we won't have to scroll through the whole thread to find what we're looking for.

EASY BREAKFAST CASSEROLE

Ingredients:
- 1 lb. sausage, bacon or ham
- 3/4 cup sharp cheddar cheese
- 1/2 cup mushrooms & pieces (optional)
- 5 eggs
- 1 3/4 cups milk
- 6-8 slices of bread (cubed)

Place cubed bread in 13x9 casserole dish; put cooked sausage, bacon or ham on top. Add sharp cheese, and place mushrooms on top if desired.

Beat eggs, milk, salt and pepper together; pour over top.

Let stand five minutes then bake at 350 until brown (approx. 35 minutes).

I've only tried this recipe with sausage, and no mushrooms...I'm not a big breakfast person, but it was really good and so easy to make! Recipe is from Cooks.com.

Pizza Macaroni Bake

Ingredients:
- 2 packages macaroni & cheese
- 6 cups water
- 1 lb. ground beef
- 1 small green pepper, chopped
- 1 cup (4 oz.) shredded cheddar cheese
- 1 jar (14 oz.) pizza sauce
- 1 package pepperoni
- 1 cup (4 oz.) shredded mozzarella cheese

Set the cheese packet from the dinner mix aside. In a saucepan, bring water to a boil. Add macaroni; cook for 8-10 minutes or until tender. Meanwhile, in a large skillet, cook the beef, onion, and green pepper over medium heat until meat is no longer pink; drain.

Drain macaroni; stir in the contents of cheese packet (I tend to follow the directions on the box including milk and butter for this part). Transfer to a greased 13 X 9 X 2 inch baking dish. Sprinkle with cheddar cheese. Top with beef mixture, pizza sauce, pepperoni, and mozzarella cheese. Bake, uncovered, at 350 for 20-25 minutes or until heated through.

(Got this one from the ladies on the Housekeeping board. It's not the fastest meal to prepare, but it's sooo good - and we have tons of leftovers! )

Beef Nacho Casserole

1 lb ground beef
1 Tbsp. chili powder
1 c. sweet corn, drained
3/4 c. mayonnaise (I didn't have any so I didn't put this in)
1 jar (12 oz.) chunky salsa
2 c. crushed Doritos, divided
2 c. (8oz) Colby Jack cheese, divided (I used shredded cheddar cheese b/c that's all I had)

Heat oven to 350 degrees. Brown meat; drain. Stir in salsa, corn, mayonnaise, and chili powder. Layer 1/2 each of the meat mixture, chips, and cheese in a 2-quart casserole dish. Repeat layers. Bake 20 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomato, if desired. **I put sour cream on top of mine and it was good!**

MEXICAN CHICKEN PIZZA WITH CORNMEAL
CRUST

Here's a simple method for making homemade pizza -- it can be on your table in 40 minutes!

1 1/2 cups all-purpose flour
1 tablespoon sugar
1 1/4 teaspoons active dry yeast
1/4 teaspoon coarse salt (kosher or sea salt)
3/4 cup warm water
1 tablespoon olive oil
1/3 cup yellow cornmeal
Additional cornmeal
2 cups Mexican cheese blend (8 oz)
1 1/2 cups shredded cooked chicken
1 can (14.5 oz) Muir Glen® organic fire roasted diced tomatoes or plain diced tomatoes, drained
1/2 medium yellow bell pepper, chopped (1/2 cup)
1/4 cup sliced green onions (4 medium)
1/4 cup chopped fresh cilantro

Heat oven to 450°F.
In medium bowl, stir together 3/4 cup of the flour, the sugar, yeast and salt. Stir in warm water and oil. Beat with electric mixer on low speed 30 seconds. Beat on high speed 1 minute. Stir in 1/3 cup cornmeal and remaining 3/4 cup flour to make a soft dough. On lightly floured surface, knead dough until smooth and elastic, about 5 minutes. Cover and let rest 10 minutes.

Spray large cookie sheet with cooking spray; sprinkle with additional cornmeal. Press dough into 14x10-inch rectangle on cookie sheet; prick with fork. Bake 8 to 10 minutes or until edges just begin to turn brown. Sprinkle with 1 cup of the cheese blend. Top with chicken, tomatoes and bell pepper. Sprinkle with remaining 1 cup cheese. Bake 6 to 8 minutes longer or until cheese is melted and edges are golden brown. Sprinkle with green onions and cilantro.

Time-Saver: You can choose to cook your own chicken, or purchase a rotisserie chicken and shred the meat for this pizza.

Makes 6 servings.
