in 4 or 5 qt slow cooker, dump (in any order)
- chicken broth (I used a 32 oz carton of progresso)
- 1 can of corn, undrained
- 1 can of kidney beans (or whatever beans you have on hand) drained and rinsed
- 1 pound of leftover or already cooked chicken (I actually used turkey- yay holiday leftovers!)
- 1 jar of salsa (I used a 16 oz jar of Pace Picante sauce)
- 1 tsp salt
cook on high for 4 hours. that's it! super easy and delicious!
Top this with your choice of shredded cheese, sour cream, and tortilla chips. We cut up some flour tortillas and fried them in a skillet with olive oil, totally amazing!!!
