1-2 onions, diced
1 bell pepper, seeded and diced
3-5 jalapenos, seeded and diced
1 cup diced carrots
2-3 chicken breasts, cooked and cubed
Tomato sauce (size depends on how much soup you wish to make)
Cilantro (depends on your taste)
Shredded cheese (cheddar, jack, colby, whatever)
Saute onions until amost clear. Add bell pepper, jalapenos, carrots, chicken and tomato sauce. Add 3 cans worth of water to misture. Add cilantro about 1 hour before serving time. Simmer. Serve with shredded cheese. You can also add crushed tortilla chips.
** You could also add corn, drained black beans, celery or any other vegetable.
