Cook 8 oz elbow macaroni; drain; rinse in cold water and set aside.
You will also need:
4 oz. sour cream
8 oz. cottage cheese (I use light n' lively)
4 oz. skim milk
12 oz. grated cheddar (or cheddar-jack) cheese--use more if you like it extra cheesy
2 TBSP (apprx) grated onion
1 tsp crushed garlic
1 well-beaten egg
Mix all the wet ingredients and seasonings, add grated cheese and mix. Add cooled macaroni and stir. Bake at 350 for 1 hour. Remove and enjoy!!
