2 -16 ounce bags frozen broccoli, carrots, and cauliflower
5 tbs flour
8 oz sour cream
1-2 tbs minced onion
1 cup shredded cheddar cheese
crumbled Ritz crackers
½ stick butter
Thaw vegetables in refrigerator overnight. Melt butter; add flour, sour cream, onion, salt and pepper. Fold into vegetables. Place into casserole dish and top with cheese and cracker crumbs. Bake at 350º for 30 minutes.
NOTES : You can try this with other frozen vegetable mixes, or freshly steamed veggies.
This can be frozen immediately after topping with cheese and cracker crumbs. Take from freezer, and bake at 350* for 45 minutes to an hour or until top is golden brown.
