Sweet Potato and Apple Casserole
6 medium baking apples, peeled and sliced
1/2 maple syrup
1/2 cup brown sugar
1/2 cup butter
salt, to taste
4 medium sweet potatoes
1 cup chopped pecans
Combine apple slices, maple syrup, brown sugar and butter in a medium saucepan. Cook over medium-low heat until apples are tender; add salt to taste. Bake sweet potatoes in their jackets until done; peel and slice. Place apples and potatoes in 4 layers in a 2-quart casserole, beginning with potatoes and ending with apples. Top with pecans. Bake for 30 to 45 minutes in a 350 degree oven.
