1 medium butternut squash
1 very large onion OR
4-5 small onions
2 Tbsp butter
1 tsp ground sage
1 pkg (15) mini phyllo dough shells
1-2 Tbsp real bacon bits
Bake the squash on a greased baking sheet at 350 for about 1 hour. Remove from oven and allow to cool slightly.
While the squash is baking, peel and roughly chop the onions. Melt the butter in a large skillet over medium heat. Caramelize the onions in the skillet by cooking over medium to medium low heat for approximately 30 minutes, or until the onions are a deep golden brown and have a sweet taste. The volume of the onions will be reduced by 2/3. Take care not to burn the onions, as this spoils the flavor.
Peel the cooled squash and mash with a fork in a large mixing bowl. Add the caramelized onions and sage. Mix well and place about 2 tbsp of squash mixture into each phyllo shell. Top with bacon bits. Serve warm or cold. Excellent warmed up the next day!
