(This is without a doubt the BEST tasting bread I have ever had! The book I got this from said the recipe was over 150yrs old)
easy oatmeal bread
1 heaping C old-fashioned oatmeal (not quick oats)
2 tsp salt
1/2 C. Molasses
4 Tbsp shortening
1 cake yeast (2 tsp dry active yeast)
1/3 C warm water
5 1/2 C flour (more or less)
Pour 1 pint (2 cups) boiling water over first 4 ingredients. Let stand until cool. Dissolve the yeast in 1/3 C warm water (I added a teensy weensy bit of sugar to "feed" the yeast). Add the yeast mixture to the oatmeal mixture. Add flour and knead thoroughly, being careful not to add more flour than needed to keep the dough from sticking. Let rise double in bulk in a warm place. Knead into 2 loaves and let rise again until double (in greased/floured loaf pans). Bake at 375*F for 45 mins.
