I'm going to try to add a recipe for each topic here Shirley...try to get these goin!

Stuffed Baked Potatoes

serves 4

2 lg potatoes
1/4 cup margarine
1/4 cup sour cream
2 tbsp milk
1/2 tsp salt
1/8 tsp pepper
1/2 cup cheddar cheese, grated
paprika as desired

Scrub and dry potatoes, pierce w/ fork. Place in microwave on hi for 6-9 minutes. Turn potatoes after 1/2 their baking time. Let stand for 5 minutes, cut in half lengthwise, and scoop out potato, being careful not to tear skin. To potatoes in bowl, add the next 5 ingredients and 1/4 cup of the cheese. Combine with mixer. Fill potato skins w/ this mixture. Place in a glass baking dish and top w/ remaining 1/4 cup cheese. Sprinkle w/ paprika and microwave on high for 3-4 minutes or until potatoes are hot, rotating dish once.

Excellent with steaks.
