Homeade Yeast Rolls
2 C lukewarm water
2 T yeast (or 2 envelopes)
1/2 C sugar
*Mix well. Let set for about 15mins or until bubbly (this will test if the yeast is good. Bad yeast won't bubble).
Add:
2 eggs
1 T salt
1/2 C oil
6-8 C flour (or until not sticky)
place in a well greased GLASS bowl (plastic does not work well for some reason) Cover. Let set 45 minutes or more. Punch down & knead until smooth & elastic. Divide into loaves (makes 2) or pinch off for rolls (makes about 30).
Bake at 350*F one hr for bread, 30 minutes for rolls.
(I use my pizza stone for these rolls, it really makes a difference. They also hold up very well in the freezer)
