3/4 c smart balance or shortening
12 TBSP milled flax seeds
1 c. packed brown sugar
1/2 c. granulated sugar
2 TBSP milled flax seeds + 6 TBSP water
1 tsp vanilla
1 1/2 c. flour
1 tsp baking soda
1/2 tsp salt (optional)
2 1/2 c. oats
semi sweet chocolate chips (or carob chips) ***chocolate chips MAY contain trace amounts of milk--carob would be advised for someone with an allergy.
First step: mix the 2 TBSP flax seeds with the 6 TBSP water. Set aside.
Second step: mix flour, soda, and salt in bowl. Set aside.
(preheat oven to 350).
Cream together the smart balance, 12 TBSP flax, and sugars. After well-creamed, add the flax mixture and vanilla and continue mixing.
Add dry ingredients mixture. After it's mixed in, add oats. After mixed, add the chocolate chips. Drop by spoonfuls onto the baking sheet and bake for 10-12 minutes. Remove and let sit on sheet for a minute or two before removing to a cooling rack.
