I hope this isn't already posted, but this is a huge favourite at my house (except for the 11 yr old picky boy)
2 cups boneless skinless chicken breast
1 to 2 tbsp olive oil
1 to 2 cups frozen broccoli (this will depend on your pan and your palette)
1 can cream of broccoli soup
1/3 cup milk
2 cups grated mozzarella cheese
1 1/4 cup cornflake crumbs (you can find this where they keep Shake 'n' Bake)
Preheat oven to 425F
Chop chicken into reasonable bite sized pieces
Place chicken and olive oil in a pan - cook thoroughly stirring often
Add frozen broccoli - turn the pan down low - cover and let the steam partially soften the broccoli - do not overcook!
Place chicken & broccoli mixture into a casserole dish
Combine milk and cream of broccoli soup in a cup/bowl (whatever works)
Pour mixture over chicken & broccoli - spread as evenly as possible
Evenly cover with approx 1/4 cup of cornflake crumbs
Add shredded mozzarella cheese - this should be enough to cover the entire top of the mixture
Add the remaining cornflake crumbs evenly to the top of the dish
Place dish uncovered in the oven for 25 minutes
Cool for at least 5 minutes after removing from the oven
This is a nice creamy filling meal, and the topping done in the way I mentioned makes for a cheesy and slightly crispy flavour.
