6 Chicken cutlets, pounded thin
1/2 tsp. red pepper flakes
12 slices of thinly sliced ham
12 thin slices of mozzarella cheese, in strips
12 dried figs, chopped
1. Preheat oven to 350 degrees. Sprinkle salt, pepper and red pepper flakes on the top of each cutlet.
2. Divide the ham.cheese and fig into 6 equal parts. Place the ham on top of the ham, then the cheese, and then the figs. Roll up each cutlet and secure with toothpick.
3. Place roll ups in baking dish until chicken is fully cooked. After removing from oven sprinkle mozzarella cheese over the rolls and serve.
