Fettuccini Rustica

8oz Fettuccini
6 strips bacon, cit in ˝” pieces
1 lb. Chicken breast cut into bite size pieces
˝ C. Flour (to coat chicken)
1 medium Spanish onion thinly sliced
2 cloves garlic, minced
1/3 C. virgin olive oil
ľ C. Parmesan Cheese
2 TBSP parsley, chopped

Cook pasta in large pot of boiling water salt water according to package. Pre-heat a large sauté pan on high heat, when hot add bacon, stirring often. When bacon is browned remove from pan, and save some of the fat in the pan.
Coat Chicken lightly with flour and sauté on medium heat in remaining bacon fat until cooked through. Add onions and garlic and cook stirring often for 2 to 3 minutes. Add olive oil, S&P and bacon to Chicken and onions. Drain pasta but DON’T rinse the starch clinging to pasta will help bind the sauce. Add pasta to Chicken mixture and toss. Stir in Parmesan and parsley and serve.
