I made roast chicken the other night and want to use the leftovers to make something good. Anyone have anygood recipes that I can use my leftover chicken for.

There's a great recipe for Chicken Pot Pie on the back of the Bisquick box.

Or do chicken quesidillas: place chunks of chicken and tons of cheese on a flour tortilla. Put into the oven and heat until the cheese melts, cover with another tortilla.

Or enchiladas: Cut the cooked chicken into chunks. Chop a small onion, and mix it and the chicken with a cup of grated cheese. (I like cheddar)
Pour half a can of enchilada sauce (we use mild when I remember to check the can ) into the bottom of a 13x9" pan. Take a flour tortilla, place some of the mixture into it, and roll it up and place in the pan. Repeat until you've used all the mixture; it will depend on how much you have. Cover with the rest of the sauce, and about another 1/2 cup of cheese. Cook at 350 for 20-25 minutes.
