I submitted this to allrecipes today, too... but I don't know if it'll get picked or not.
I make stuff up all the time, and this is just another example of that. This also can be made fairly inexpensively and serves 6 to 8.
16 oz. rigatoni
2 chicken breasts, cut into small pieces
1 TBSP vegetable oil
1 TBSP grated parmesean
1/2 tsp pepper
1/2 tsp salt
8 oz. ricotta cheese
8 oz cottage cheese
1/4 c milk or cream
2 cloves garlic, minced or crushed
1/4 c minced onion
1/2 can spinach (I serve the rest on the side)
1 jar of your favorite pasta [tomato] sauce
2/3 cup water
1 cup shredded mozzarella
Cook pasta as directed
meanwhile, put chicken in pan with oil, parmesean, pepper, and salt and cook through
mix ricotta, cottage cheese, milk, egg, garlic, onion, and spinach
Add cooked chicken to cheese mixture and mix well
pour cheese mix on top of noodles and mix well
place half of the noodles and cheese in baking dish, pour about half of the sauce on top, and dash lightly with half the water (mostly around edges)
spread 1/3 of the cheese on top of it
put the other half of noodles on that, and put the sauce and water on, and top with cheese
bake, covered, at 375 for 45 minutes to an hour.
If desired, bake the last 10 minutes without the cover if you like the cheese browned.
