I don't usually experiment much with recipes, but I felt adventurous so I looked up a bunch of sheppard's pie recipes - none of which sounded quite to my liking - and mixed them up to make my own!
1lb ground beef (for lower fat, try ground turkey, it works great!)
2 envelopes brown gravy mix, prepared
Instant mashed potatoes (2 cups of flakes, prepared)
2 cloves garlic, minced
1 tbsp rosemary
1 11oz can whole kernal corn
salt and pepper to taste
Preheat oven to 350 degrees. Brown beef in a skillet and drain, then add gravy, garlic, rosemary, salt, pepper, and corn. Mix together until everything is coated, let simmer for a few minutes if the gravy is still runny. Put the mixtures into a greased 9 x 9 baking dish. Top with mashed potatoes - be sure to leave a quarter of an inch at the top of the dish. With a fork, poke a few vent holes through the potatoes. Bake for about 30 minues or until the potatoes are just starting to brown on top.
I usually will place the dish onto a cookie sheet covered with aluminum foil... The gravy has a tendancy to spill over a little, and it's a lot easier to throw out the tin foil than it is to get gravy off my oven!
