For one sub...
1 hamburger-style bun, sliced down the center
2 slices bologna
2 slices swiss cheese
Tip: While any hamburger bun will work, some grocery stores have kaiser buns that are a little bigger and hold the bologna better.
Split the bun and spread tomato paste kind of thick on both top and bottom. Place both halves on a baking sheet covered with foil (for easy clean up!) with the paste facing up. Add a slice of bologna to each side, then a slice of swiss cheese on each. Put under the broiler for 3-5 minutes until the cheese is bubbling; the bun should have crisped up around the edges but not burned. Pull them out and add veggies as desired or just slap the sides together and enjoy!
This is a really simple one that I absolutely LOVED growing up, and still do now as a quick and easy meal when I'm in a rush. It's really customizable too; DH prefers me to just butter his buns so they don't get soggy from the bologna, then he will add mayo once they're broiled. I use low fat/fat free bologna and skim milk swiss, and to jazz it up I usually pick up one of the spiced tomato pastes - Italian Herb, Garlic, etc. Comfort food!
