1 1/2 pound ground beef
1/2 package dry onion soup mix
1 can cream of mushroom soup
1/2 cup dry bread crumbs
2 tsp Worcestershire sauce
1/2 tsp parsley
1/2 tsp garlic powder
pinch of chili powder
Mix everything together. (I usually do everything but the cream of mushroom and ground beef, then dump the meat, soup, and mixture into a big bowl and fold it together.) Shape into a loaf and put into a greased loaf pan - I like to put the ends of a loaf of bread onto the bottom of the pan first to catch the run off grease. I squirt a layer of ketchup over top, like 1/4 to 1/2 inch thick, because DH and I both grew up with ketchup on our meat loaf - a lot of recipes don't call for that. Bake at 350 degrees for 45 minutes and eat up!
I usually cut this recipe by about a third so that it fits into our tiny loaf pan. Just a tip for others who may have a small one as well! I've tried a lot of meat loaf recipes, after tweaking a basic recipe this one has become, by far, our favorite, and it's a quick and easy recipe (important for a working mom!) with things that are always in our kitchen.
