Chicken Enchilada with white sauce

Making this recipe is a little time-consuming, so if you have small children, you might want to make sure that they're thoroughly entertained while you cook.

4 c. cook chicken
1 c. chopped onions
1/4 c. butter
1/4 c. unsifted flour
2 1/2 c. hot water or chicken broth
1 container (8 oz) sour cream
2 c. shredded cheddar cheese
1 can (4 oz) chopped green chilies (drained)
1 tsp ground cumin
10 flour tortillas

Sautee the butter and onions until tender, stir in the flour, add water or the broth (broth is the best). Sthir and cook until thickened.

Remove from heat and add the sour cream.

In a large bowl, combine 2 cups of the sauce, chicken and 1 cup of the cheese, chilies, and cumin.

Place the above mixture in the tortillas, roll and place in 9 x 13 baking pan, sprayed with Pam.

Top the rolled tortillas with the remaining sauce and cover with remaining cheese.

Bake in preheated oven of 350 for 25 minutes or until bubbly and hot.


Now, I like to put sour cream on them afterwards to serve, as well, but then, I've been putting sour cream on just about everything since I got pregnant. Hahaha...

My DH loves chicken enchiladas with sour cream sauce, so you have made his day. I just have to buy the ingredients I don't have!

I found this yesterday on here. An I made it today and my family loved it. An now my neighbor wants me to make it for her family...
