Black Bean & Ham Casserole (from bisquick.com)
1 T vegetable oil
1 large onion, chopped
1/2 C chopped red/green bell peppers
2 cans (15oz each) black beans, undrained
2 C cubed fully cooked ham
2 t chili powder
1 1/2 C original bisquick (I use reduced fat)
1/3 C cornmeal
2/3 C milk
1/2 C shredded cheddar
Heat oil in 4 qt dutch oven (big covered pan that is oven and stovetop safe) over medium heat. Cook onions & peppers, stirring occassionally until tender. Stir in beans, ham, and 1 tsp of chili powder. Heat to boiling, reduce heat to low.
Stir bisquick, cornmeal, milk & remaining tsp of chili powder in medium bowl until soft dough forms. Drop by 6 spoonfuls onto simmering bean mixture (think dumplings). Cook uncovered 10 minutes. Cover & cook 8 minutes longer. Sprink w/ cheese. Cover & cook 2 minutes longer or until cheese melts.
