2-3 boneless skinless chicken breast
2-15oz can on chicken stock
1 can diced tomatos with jalepeno
1 small can diced green chilies
2tsp chili powder
1 medium onion
2-3 cloves of garlic
1 can of corn
1/2 cup of crushed tortilla chips
1 can of black beans (optional)
in skillet, over medium heat, sautee onion in a little oil for 5 minutes. add garlic and spices cook for 1 more minute. to crock pot, add all of the ingredents except for beans and corn. put crock pot on high and cook for 4-5 hours. last half an hour add corn and beans. shred the chicken about 3/4 of the way through cooking time or you can poach ahead of time and shread then. serve with additional crushed tortilla chips and shredded cheese. makes 4-6 servings.

My DH is too but he loved it. i got the recipe out parenting magazine. when you cook it the tortilla chips disolve and thicken the soup. you dont have to serve it with chips or cheese. thats jsut the way we have always eaten it. its pretty tasty and good for you too so thats an added bonus
