1-1 1/2 pounds ground beef
2 cans enchilada sauce
white corn tortillas
2 8 oz. packages shredded colby/jack cheese
Adobo seasonings (found in aisle with hispanic foods)
refried beans (optional)
Cook hamburger meat and onion, seasoning with Adobo, or what ever suits. Spray crockpot with Pam. Pour some enchilada sauce in bottom of crock. Layer some corn tortillas next. Add in some ground beef, refried beans if desired, then some more sauce, and then some cheese. Repeat as many times as you want, I usually do about three complete layers, adding on some extra cheese onto the top layer. Cook on low for 5-7 As many hours as you need.
