1 cup grahm cracker crumbs
1/4 cup sugar
1 tablespoon melted butter
12 oz softened cream cheese
1 cup sugar
1/2 teaspoon vanilla
1/4 cup peach jam plus 1 cup for topping
Preheat oven to 350 degrees farenhiet
combine grahm crackers with sugar & butter and press against the sides of a springform pan or deep dish pie pan.
prepare filling by beating eggs and cream chees together. add sugar and vanilla and beat untill well blended. add 1/4 cup jam and mix until incorperated. pour mixture into crust and bake for 35-40 minutes. remove from oven and let stand for 10 minutes. top with remaining peach jam and cool to room temperature and refridgerate overnight.
Garnish with fresh peaches if desired.
